THE ELIAS FAMILY ESTABLISHED THEIR WINERY IN PISCO IN 1788 IN THE SUNNY VALLEY OF ICA
The Valley of Ica, located 300 km south of the city of Lima, encounters the special conditions necessary to achieve very sweet grapes: clay soil with a sandy base, abundant water in the subsoil, sunshine throughout the year, raw winters and hot summers.
Our pisco comes from three strains of grapes, aromatic and non-aromatic ("acholado") that provide you with the aroma that identifies you with history and whose mixture is "the ancient secret of the family".
A LITTLE ABOUT OUR HISTORY
Don Isidoro Elias and his brother Domingo founded their winery to produce handmade pisco. They owned fine grape vineyards. Since its inception the winery was an example of installation. It boasted a wine press, jars to ferment the must of 25,000 kg. of grape, two stills and countless earthenware jars mud to store the pisco
By the 1830s, the Elias brothers already exported their pisco and wine to Europe and North America, having been Emperor Napoleon Bonaparte one of his happy tasters.
Generations later, in 1975 a direct descendant, Don Aldo Elías Olivera, took charge of the winery in honor of the founders. He renamed it as Winery Don Isidoro and returns to the preparation of pisco, he remodels it, multiplies its capacity and builds two wineries and installs two other stills, builds fermentation pits to store 500,000 liters of grape must and new pisco storage tanks to replace the old mud earthenware jars (it currently has one with a storage capacity of 100,000 liters of pisco). He also equipped these facilities with technological elements of the latest generation for the control of production and thus be able to offer your product to an increasingly demanding market.
Currently, his son Don Mario Elías Boado, is in charge of the winery and is pleased to offer you the best of his production, continuing with "the ancient secret of the family" and with the enthusiastic support of his wife Monica and her daughters Nathalia and Mariana has launched lines of creams and delicious martinis prepared with roots of pisco and cocoa and fruit juices, liqueurs that are something special, something worthy of the best palate.
